Bardstown Bourbon’s Discovery, Fusion Expressions See Their Seventh Releases

Bardstown Bourbon Company recently added two new bottlings to their Fusion and Discovery lines of whiskey.

Fusion Series #7 and Discovery Series #7 are now available at the distillery, as well as in 20 markets across the country, and with these additions, the distiller looks to highlight what’s described as complex mashbills and explore the art of modern bourbon blending.

The makers at Bardstown said the Discovery Series was designed to showcase the art of blending with an emphasis on old and rare whiskies sourced from a variety of origins.

Discovery Series #7 incorporates aged bourbons and rye along with aged Canadian whisky from Ontario, as the series crosses into international territory.

“The Canadian Whisky blends beautifully with the bourbon and rye, adding a subtle sweetness and rounded finish,” said Dan Callaway, Bardstown hospitality and product development, in a prepared statement. “With our Discovery Series, we continue to push boundaries through innovation, passionately pursuing new flavor.”

He explained that Discovery #7 has aromas of baked cherry with a touch of mint and raspberry genoise. A creamy, round mouthfeel has flavors of baked apple and brown sugar, leading to a long finish. Discovery Series #7 clocks in at 114.5 proof and has a suggested retail price of $139.99.

The Fusion Series is highlighted by blending older sourced whiskies with more recently distilled stock made at the Bardstown, Kentucky distillery. The series shows a range of mash bills across the selected aged products which includes corn, rye, wheat and malted barley.

Fusion #7 is 70% three-year-old Bardstown bourbon and 30% twelve-year-aged sourced whiskey. It includes five distinct mashbills … three from three-year-old Bardstown bourbon and two from the 12-year-old sourced stock.

The distiller’s notes show Fusion #7 features aromas of nectarine with toasted almond and honey, and that leads to cedar and toffee with light tannin on the palate. This bourbon clocks in at 98.1 proof and has a suggested retail price of $64.99.
