New Cascade Moon 15 Year Old A Barrel Proof Spirit Under 40% ABV

Cascade Hollow Distilling just launched a 15-year-old barrel proof spirit in select U.S. markets that technically doesn’t qualify as a whiskey.

The new Cascade Moon offering originally entered the barrel at 115 proof, where it was aged for 15 years in Cascade Hollow’s single story rickhouses.

Cascade’s General Manager and Distiller Nicole Austin explained in a prepared statement that as a result of the curious conditions experienced by these barrels, the proof of the offering dropped to 79.8, below the minimum standard to be classified as a whiskey.

Since its founding in 2020, the Cascade Moon Series has sought to explore what’s described by the brand as the relationship between proof and quality in the whiskey category.

“With each Cascade Moon release, I’ve had the chance to share a variety of different offerings based on my inspirations at the time,” Austin said. “One thing that drew me toward releasing something like Cascade Moon 15 Year Old Barrel Proof is how it perfectly demonstrates the balance of approachability and quality possible with a lower-proof spirit. I hope this release helps change the way the category perceives lower proof spirits, while also providing whisky fans with access to an elegant spirit.”

The distiller’s notes describe the Cascade Moon 15 Year Old Barrel Proof as a spirit with a surprising depth of character, offering an aromatic and tropical nose, with a finish of leather and oak.

The release of Cascade Moon 15 Year Old Barrel Proof comes shortly after the Cascade Moon 13 Year Old Rye won Double Gold at the San Francisco World Spirits Competition in May.

Available now, Cascade Moon is in select markets for a limited time, with a suggested retail price of $124.99.
