Stillwater Spirits is one of those smaller regional distilleries that you don’t hear much about on a national scale, but it’s popular among locals as a source for quality whiskey. Located a little north of San Francisco, Stillwater Spirits sells its whiskey under the Moylan’s Whisky brand. Now, two new expressions just coming to market under the label look to be very interesting indeed.

The new Moylan’s 117.4 proof Double-Barrel Cask Strength Single-Malt Whisky and 86 proof American Single-Malt Whisky, according to the distillery, are the third releases of its “American whisky” bottlings. They are described as “true single-malt” whiskies, done not in the Scotch style, but rather in the American single malt way. “All sweet, no peat,” says Stillwater Spirits founder Brendan Moylan in a statement.

As to what’s in the bottles, again according to Stillwater:

Moylan’s Double-Barrel Cask Strength Single-Malt Whisky is aged for at least 4 years in new and used American White Oak barrels and finished in French Oak and Orange Brandy barrels which helps to coax out the rich, sweet luscious character of this amazing whisky. The American Single-Malt Whisky is the same blend of 5 different barrels from our collection of whisky casks. The resulting whiskies have been described as “just simply works of art.”

To create these exceptional whiskies, Moylan’s Distilling Co. first ferments 100% two-row barley, and then distills the whisky wash into “Ethyl” our Vendome Copper Pot Still from Kentucky to handcraft whiskies of uncompromised quality.

With regards to availability, these bottlings will be appearing in “limited release in a few select markets in Northern California.” So, if you have a favorite online liquor retailer in that area, you may want to watch their site to see if they get some bottles. No immediate pricing information was given.
