Chattanooga Whiskey Releases its Second Islay Scotch Cask Finish

Chattanooga Whiskey’s limited-edition finishing series celebrates the blending of their Tennessee High Malt into a wide variety of finishing casks.

They are a union of one-of-a-kind bourbon mash bills, each containing more than 25 percent of specialty malt, and each batch is made to complement the flavor characteristics of the final finishing barrel.

For the second finish in this series, Chattanooga’s distillers looked to one of the most famous whisky styles, Islay Scotch.

Each batch of Chattanooga’s newest expression, according to them, is made from a blend of three finishing casks, sourced from three different distilleries in the southernmost part of the Scottish isle – near Kildalton. This region of Islay is known for earthy and peat-forward scotches made from barley malt that’s dried and smoked with peat moss native to the island.

Chattanooga’s distillers selected a pair of complementary-flavored mash bills, including B004 – a Scottish style bourbon recipe containing peated malt, naked oat malt and honey malt. It’s then aged for more than four years, including three months in 250 liter Islay Scotch hogsheads.

  • Proof: 95 (47.5% ABV).
  • Mash Bill: B004, SB091.
  • Cooperage: 53 gal, toasted & charred oak barrels.
  • Filtration: Non-chill.
  • Finishing Cooperage: Islay Scotch Barrels (3 types).
  • Finishing Time: Greater than 3 months.
  • Age: More than 4 years.
  • Batch size: 5-7 barrels.
  • Tasting notes: Earthy smoke, heather, honeydew, toasted oats, & toffee pudding.

This second release of the Islay Scotch Cask Finish went on sale first exclusively at the Chattanooga Whiskey Experimental Distillery on Jan. 21st. It is now making its way to select markets (TN, GA, FL, TX, & IL).
