About:
This whiskey combines the distillery’s base bourbon whiskey with a touch of organic, unfiltered Blue Agave nectar from Jalisco, Mexico. It is bottled at 40% ABV and priced at $31.99.
Appearance:
The color in this glass holds the typical amber the base bourbon does, with legs and viscosity being of moderate quality.
Nose:
Due to the agave influence, this nose is not just your typical corn sweet and oak bourbon profile. Those aromatic elements are present, but also in the mix is a bit of cloying honey, smoke, and earthiness.
Palate:
Honey is the first and foremost note on sip, joining the regular vanilla sweetness in bourbon to give this an extra sweet kick. Beyond this, there’s the oak, a little bit of dried grass, some spicy pepper, and a nudge of graham crackers.
Finish:
This finishes a bit muted at first but then pops an almost sugar-like end, holding out for a moderate amount of time.
Comments:
I’ve typically never been a fan of whiskeys with any flavoring brought into the mix that’s not grain or wood-influenced. That being said, I find Devils River Agave Bourbon the rare exception – I could see sipping this on occasion, especially over ice on a hot summer day. It is certainly suitable for cocktails also.

Devils River Whiskey, founded in San Antonio, Texas, in 2017, is named after Devils River in Southwest Texas. This craft distiller of bourbon, though it has garnered recognition for its products through SIP Awards, The Fifty Best accolades, and International Spirits Competition gold medals, is perhaps best known for the fact former wrestler and current actor Dave Bautista joined the ownership team in 2023. 
Devils River offers eight expressions, ranging from premium Bourbon, Rye, and Barrel Strength to a growing assortment of flavored whiskey, including Coffee, Agave, and Cinnamon options. The limestone-filtered water the distillery sources from the Devils River is said to be a key ingredient in the whiskey’s finishing process.

What’s in the bottle

The whiskey being reviewed here, Devils River Agave Bourbon, is a result of combining the distillery’s base bourbon whiskey with a touch of organic, unfiltered Blue Agave nectar from Jalisco, Mexico. Described as “Bourbon Whiskey With Natural Agave,” it is non-age statement in nature and bottled at 40% ABV.

In a recent discussion I had with the distillery about this whiskey, I learned it is their top seller. The nectar is sourced from an agave farmer working with a minimum of 7-year-old agave plants, similar to that used for tequila. The nectar is infused directly into the regular bourbon and then blended.

Devils River Agave Bourbon costs $31.99 and can be enjoyed neat, on the rocks, or in a cocktail.
