Rabbit Hole Distillery has unveiled Amrûlé, a limited-edition rye whiskey finished in custom maple brûlé barrels as part of its exclusive Distillery Series. The Louisville-based distillery will release the new expression on November 25 at its Kentucky facility for $49.99 (£39.50).

The release features the distillery’s signature Sour Mash Rye aged over four years and finished for nine months in specialized barrels from Tonnellerie Moreau in Quebec. The Canadian cooperage applied maple seasoning and high-intensity char to create what the brand describes as a “smoky, dark caramel veil” inside each barrel.

“Amrûlé is my exploration of what happens when fire meets sweetness, when rye’s bold spirit encounters the quiet poetry of maple,” said Kaveh Zamanian, founder of Rabbit Hole.

“It’s my effort to push boundaries without breaking faith with the craft. In those maple brûlé barrels, I found a new way to tell rye’s story, one that’s darker, richer, and deeply personal.”

The whiskey is bottled at 104.4 proof. Official tasting notes from the brand include bright floral notes, caramel, dark toffee, roasted pecans, and brown sugar on the nose.

The palate delivers dark cherries, stone fruit, cardamom, oak, and herbaceous undertones with a viscous mouthfeel. The finish features cinnamon, nutmeg, and black pepper with what the distillery calls a “long, lingering” character.

Rabbit Hole produces its Kentucky Straight Bourbon and Rye Whiskeys using signature malted grains and distinct mash bills for each expression. The spirits enter barrels at lower proof to preserve flavor before maturing in toasted and charred barrels. Production occurs in small batches limited to 15 barrels at a time.

The Distillery Series represents Rabbit Hole’s platform for experimental releases and what the company describes as “boundary-pushing innovation and artisanal craftsmanship.”

Amrûlé marks the latest addition to this collection of limited productions. The whiskey will be available exclusively at Rabbit Hole Distillery starting November 25.
