A new limited-edition English whisky celebrating wildflowers and regenerative farming arrives this August with only 1,000 bottles available worldwide.

Fielden Hazybower Draws Inspiration from English Countryside Flora

Fielden Whisky has announced the release of Hazybower, the second chapter in its Fieldnotes collection. The new expression honors the wild herbs and flowers growing naturally among grains in England’s biodiverse fields.

Limited to 1,000 individually numbered bottles, Hazybower follows the 2024 release of Hedgerow. The whisky features a blend of heritage rye, wheat, and barley grown as diverse field mixtures, including traditional maslin cultivation methods.

The grains undergo fermentation and distillation with grain in both pot and column stills. Much of the whisky was matured in re-used American oak casks previously holding Fielden’s signature rye whisky. A portion also matures in old Hungarian oak Tokaji wine casks, adding honey and spice notes to the whisky’s floral and citrus character.

Fielden’s whiskymaker Chico Rosa explained the philosophy behind the release: “While conventional agriculture often suppresses diversity, we aim to champion it here at Fielden. These plants aren’t just beautiful – they contribute to healthy soils, resilient crops and complex, layered flavour.”

Fielden’s Hazybower Reflects Regenerative Farming Practices

The Fieldnotes series explores four flavor pillars behind Fielden’s signature rye whisky. Each chapter draws inspiration from different elements of the field ecosystem. Hazybower celebrates wildflowers, herbs and resilient plants cohabiting Fielden’s regeneratively farmed grain fields, including clover, poppies, thistles and mayweed.

Fielden employs what it calls “No Chem Regen” farming methods. The distillery works with farmers across England who plant diverse grains among clover, which acts as natural fertilizer. They avoid chemical inputs and minimize soil disturbance. This approach nurtures healthy soils, clear waters and biodiversity while encouraging crop resilience and reducing agriculture’s carbon footprint.

Official tasting notes describe Hazybower opening with “bright citrus and blossom, hints of custard, freshly baked scones and green herbal notes”. The palate has lemon tart, cream, toasted nuts, honey and sorrel. The finish brings fresh peppercorn and ginger leading to a lingering spiced finale.

Rosa adds: “We hope that Hazybower is both a sensory journey and a statement of our regenerative farming values worth sipping.”

Hazybower will be available from August 6 through Fielden’s website and Berry Bros. & Rudd while stocks last. The whisky carries a retail price of £102.50 and is bottled at 46.3% ABV.

Whisky enthusiasts visiting London can experience Fielden at Hotel Café Royal’s Fielden Terrace, open from July 22 through September 1. The terrace offers Fielden cocktails, including a Rye Old Fashioned, Fielden Highball, and Harvest Julep.
