Pioneering organic scotch whisky producer, Nc’nean, is making waves in the American market with the launch of its latest Quiet Rebels series release, featuring just 630 bottles for US distribution. This highly anticipated release marks a significant milestone in the brand’s mission to bring sustainable scotch whisky to a new generation of drinkers.
The fourth iteration in the innovative series spotlights Amy Stammers, Nc’nean’s Head of Sustainability, who joined the distillery in 2017. Initially serving as Visitor Manager, Stammers quickly carved out a crucial role focusing on the distillery’s environmental initiatives.
Sustainable Production Takes Center Stage
The limited-release features whisky finished in ex-Maury casks sourced from a small organic vineyard in France, where 60-year-old vines are maintained using sustainable farming methods including agroforestry. This innovative approach involves integrating trees amongst the vines to improve soil richness and biodiversity.
The vineyard also embraces biodynamic principles, including following the lunar calendar for planting and harvesting – a practice supported by several agricultural studies. These carefully selected ex-Maury casks are combined with Nc’nean’s signature STR red wine and ex-bourbon casks to create the final expression.

“Doing things as sustainably as possible is something that I think is really important, it’s why I wanted to work for Nc’nean and what I wanted to bring to my whisky,” says Stammers. “Our supply chains are a great platform to talk about sustainability so I wanted to find barrels from a vineyard that is doing great things for the land just like the farmers that grow our barley.”
Breaking New Ground in Scotch Whisky
The Quiet Rebels series has gained recognition for its unique approach to whisky creation, allowing team members to select casks and put their names on the bottles. This initiative aims to demonstrate the accessibility of scotch whisky while celebrating diversity within the industry.
Stammers’ role at Nc’nean extends beyond cask selection. She leads research into reducing the distillery’s carbon footprint, builds relationships with organic farmers, and works on achieving net zero and B-corp credentials. These principles are reflected in every aspect of the new release, from cask selection to packaging.
