Maker’s Mark has launched Star Hill Farm Whisky, marking the distillery’s first new mashbill and first wheat whisky in its over 70-year history, with regenerative agriculture principles at its core.

The limited annual release will debut in the United States and the United Kingdom in mid-May 2025, with Australia receiving allocation later in the year. Bottled at cask strength (57.35% ABV/114.7 proof), the whisky carries a suggested retail price of $100 (£77). Maker’s Mark Star Hill Farm Whisky 2025 will soon be available at the Maker’s Mark Distillery exclusively when booking a Star Hill Farm Whisky experience, and at selected nationwide retailers.

Rob Samuels, an eighth-generation whisky maker and managing director of Maker’s Mark, emphasized the significance of this release.

“Guided by our founders’ pursuit of excellence and a higher purpose, we are proud to share Star Hill Farm Whisky with the world — a 10-year journey to unlock nature’s depth of flavor, resulting in something new from the Maker’s Mark Distillery,” said Samuels.

Unlike the distillery’s iconic bourbon, which has maintained the same mashbill for over seven decades, Star Hill Farm Whisky removes corn entirely. The inaugural 2025 release features a blend of two distinct mashbills: one combining 70% soft red winter wheat with 30% malted barley, and another using 100% malted soft red winter wheat.

Master Distiller Dr. Blake Layfield described the whisky’s profile: “This release is a complex yet balanced blend of seven- and eight-year whiskies, bottled uncut at cask strength. The nose captivates with notes of buttery caramel, golden raisins and gingerbread. On the palate, you’ll find a soft, bright mix of honeyed toffee, chocolate-covered cherries, and a hint of apple pie spice. The finish is smooth and inviting, with toasted pecans and soft cinnamon bringing it all together.”

Pioneering Sustainability in Whisky Production

The new expression takes its name from the 1,100-acre farm where Maker’s Mark Distillery has operated since its founding in 1953. This location was specifically chosen for its water source and proximity to grain growers.

Maker’s Mark has established significant sustainability credentials, becoming the first bourbon distillery in Kentucky to achieve B Corp Certification and the first distillery globally to receive Regenified certification.

With this launch, the company is dramatically expanding its environmental commitment by establishing The Maker’s Mark Regenerative Alliance. The initiative partners with Regenified and Understanding Ag to provide education and technical support for healthy farm ecosystems.

“The launch of Star Hill Farm Whisky will expand our platform to advance regenerative agriculture beyond our business, fostering a more sustainable future for our industry, people and planet,” added Rob Samuels.

The distillery has pledged to transition one million acres of conventional farmland to regenerative practices over the next three years. The Alliance will initially target farms, bars, and restaurants in New York, Kentucky, and greater London to adopt regenerative practices.

Star Hill Farm Whisky will also be the first to carry the Estate Whiskey certification, a new designation established by the University of Kentucky’s Estate Whiskey Alliance. This certification indicates whisky produced entirely on the distillery estate using grains from estate-owned or controlled land.
