Every so often, a whisky comes along that quietly outclasses the rest. The Caol Ila 17 Year Old 2007 from Halcyon Spirits is one of them, a single-cask Islay malt that delivers remarkable depth, balance, and personality. 

Bottled at cask strength by one of Scotland’s rising independent bottlers, it’s a standout in our 2025 reviews. As our reviewer Phil Dwyer put it: “A sublime example of Caol Ila that every Islay whisky fan should try to seek out.”

The Quiet Brilliance of Caol Ila

Nestled on the northeast coast of Islay overlooking Jura, Caol Ila (Gaelic for “Sound of Islay”) was founded in 1846 by Hector Henderson and has weathered both boom and bust, including complete rebuilds in the 1970s and ownership under Bulloch Lade, DCL, and today Diageo

Despite being the largest distillery on the island in terms of capacity, it still maintains traditional methods, including copper pot stills designed to mirror the originals, and sourcing its peat‑smoked malt from Port Ellen.

Caol Ila is often called Islay’s “under‑appreciated gem”: less heavy than some peers but with a distinctive combination of bright fruit, seaweed, and aromatic smoke. This lighter style comes from a higher spirit cut, taller stills, and a longer fermentation, preserving more delicate esters alongside coastal phenols. Most of its production is destined for blends like Johnnie Walker, with only a small proportion released as single malt historically.

This restrained, elegant character is what makes Caol Ila a favourite among independent bottlers, where its nuanced profile shines in single-cask releases like this Halcyon 17 Year Old. Rather than chasing the extremes of peat, Caol Ila delivers maritime finesse, ripe pear, gentle grassiness, and lingering smoke, a sophisticated expression of Islay’s quieter side

Why the Halcyon Spirits Caol Ila 17 Year Old Stands Out

Distilled in 2007 and bottled in 2024, this 17-year-old Caol Ila was drawn from a single cask (No. 306807) and released at natural cask strength, 56.0% ABV, non-chill-filtered, and with natural colour. It’s a release that captures the Halcyon Spirits ethos: no shortcuts, no compromises, just exceptional whisky from exceptional casks.

This particular bottling layers Caol Ila’s signature seaweed smoke with waves of tropical fruit, brown sugar, and spice. Reviewer Phil Dwyer called the nose “a wonderful mix of tropical fruit and salty, Islay smokiness,” and praised the palate’s “waves of salt, seaweed, ginger… mixed in with the peat.” What ties it all together is a sweet backbone of “vanilla, chocolate, caramel” and a finish that moves into “Amaro, orange bitters… and bitter dark chocolate.”
