Whiskey Review: Two Souls Spirits 6-Year Straight Rye (Wollersheim Distillery)

Tasting Notes:

A Wisconsin rye whiskey aged over six years and released from an American independent bottler. It is bottled at 118.4 proof and priced at $84.99.
A lovely shade of golden amber in glass is supported by light legs and moderate viscosity.
The nose has a distinct peppery spice and maple aroma, supported by a mix of other aromas, including bread pudding, baked corn muffin, a kiss of vanilla, a smattering of oak, and a bit of minty herb.
Strangely, a solid amount of maple pops out as the first flavor on this one, alongside a generous amount of coriander. Some bready considerations are also present on the palate, alongside a helping of oak, banana, coffee, and a little hint of vanilla.
The finish is bold and punchy, carrying itself well into the back of your throat in a long-lasting experience.
Understandably, one can see why the nickname “Wisconsin Waffles” applies here in the flavor mix—this cask-strength rye feels a bit breakfasty. Overall, it is a good offering, though unfortunately, as of this review, it is sold out.

The world of American independent bottlers and whiskey blenders is a still emerging trend in the greater world of all things whiskey in the United States. The primary focus in this niche category is an eclectic mix of individuals sourcing unique barrels from top craft distilleries across the country and releasing them under their label, often giving a distinct and transparent call out on the labeling to where the whiskey was sourced from.

While the best known of this category are the likes of Single Cask Nation and Lost Lantern, several small players also exist in the space. One of these is Two Souls Spirits, co-founded by James Estrada and Chad Civetti in 2021. Describing their single barrel releases as “big, bold, 100% uncut and unfiltered,” they’ve netted some awards for their products and most recently released a trio of expressions for their spring 2024 offerings.

What’s in the bottle

The whiskey being reviewed here, Two Souls Spirits 6-year Straight Rye Whiskey featuring Wollersheim Distillery, “Wisconsin Waffles,” is one of their spring 2024 releases and was sourced from Wisconsin-based Wollersheim Distillery. Distilled from a local grains mash bill of 66% rye, 22% corn, and 12% malt that was milled on-site, this straight rye whiskey was laid down in January 2018 in a pre-char toasted, char #3 barrel and bottled this past March, giving it an age statement of just over six years.

Bottled at 118.4 proof, this whiskey is priced at $84.99. It is named Wisconsin Waffles as Two Souls describes this release as offering notes of “fresh-baked peach cobbler and waffles with maple syrup, all topped with cinnamon drizzle and served on a toasted oak slab. “
