Tasting Notes:

About:
A Tennessee whiskey aged 12 years and crafted to meet the criteria for a bottled-in-bond offering. It is bottled at 100 proof and priced at $44.99.
Appearance:
A very well-colored amber-golden hue reflects in the glass, offering moderate legs and light viscosity.
Nose:
On the nose, this is a classic Tennessee whiskey, dialing in well-defined notes of deep vanilla, bright cherry, hearty oak, some maple, and a nice dusting of hazelnuts.
Palate:
Classic, classic, classic. Did I say classic? This experience hits perfectly across the palate, delivering an extremely well-balanced flavor profile that reflects notes of vanilla, dried cherries, brown sugar, a pop of oak, almonds, and a backsplash of black pepper.
Finish:
The finish on this is warm and hugs you, keeping an excellent grip as it lets go after a lengthy period.
Comments:
A mainstream bottled-in-bond American whiskey aged 12 years, priced around $45, and of this high quality is rare these days. You can’t look the other way if you come across it in a liquor store.

There are two primary Tennessee whiskey labels people the world over are very familiar with—Jack Daniel’s, owned by Brown Forman, and George Dickel, owned by Diageo. The latter is produced at the Cascade Hollow distillery in Tullahoma, TN, tucked away in the Tennessee hills and surrounded by 600 protected acres of forest and crystal-fresh springs.

Led by Director of George Dickel & Luxury Whiskey Nicole Austin, the distillery is known for its flagship George Dickel Bourbon (aged eight years), which goes through the charcoal filtering process Tennessee whiskey is known for. Austin has been given wide leeway to drive the strategic vision for the Dickel brand, typically resulting in mainstream releases that are both award-winning and cost-effective for typical consumers.

What’s in the bottle

The whiskey being reviewed today is George Dickel Bottled in Bond Spring 2011. It is part of the George Dickel Bottled In Bond line-up, a particular love of Austin that’s garnered an award-winning legacy. It follows the criteria for bottled-in-bond (one distilling season, one distilling location, bottled at 100 proof, etc.) and is noted as being the fifth release in the series.

Like the previous series offerings, Austin’s distilling process for the Bottled in Bond series began with a blind tasting. This year, Austin was drawn to barrels from the spring 2011 distilling season. It has an age statement of 12 years old and was distilled from a mash bill of 84% corn, 8% rye, and 8% malted barley.

“Something that makes this series so special is that whisky fans have the rare opportunity to try expertly crafted bottled in bond offerings at a great price,” said Austin at the time of this whiskey’s release. “If you’re a fan of the category, you know the designation requires the liquid to be from just one distillation season, among other regulations. Our bottled in bond offerings are a testament to the quality of our inventory and the commitment at Cascade Hollow to consistently produce outstanding whisky.
