About:
A bourbon made in four batches of 10 barrels each, aged over four years, and sporting a complex mash bill containing multiple varieties of malted wheat and malted barley. It is bottled at 100 proof and priced at $52.99.
Appearance:
An attractive moderate amber is in the glass, showcasing moderate legs and viscosity.
Nose:
On the nose, this bourbon has a primary sweet vanilla, rich cereal note alongside a layered mix of butterscotch, decadent caramel, some oak, a little bit of coffee, brown sugar, and a hint of pears.
Palate:
Upon splashdown on the palate, this is sweet vanilla and quite a bit of baked bread, sweeping through the mouth as it carries other taste considerations of butterscotch, apple butter, caramel, oak, a touch of toasted almonds, and a kiss of cumin.
Finish:
The finish here is a subtle sweetness and spice, holding in the back throat for an extended period.
Comments:
Chattanooga Whiskey Bottled in Bond Spring 2020 is an excellent bourbon and yet another fine example of how this distillery is making a name for itself in the land of Jack and George. The complexity of the overall mash bill makes this one stand out.

Chattanooga Whiskey, in the business of Tennessee whiskey since 2011, initially had to overcome prohibition-type laws to win the right to distill whiskey in Chattanooga for the first time in 100 years. Led by Founder Tim Piersant, Chattanooga Whiskey today has two distilleries under its label, including the Experimental Distillery, which is said to be “the only standalone experimental distillery in the country.”

The other distillery, The Riverfront Distillery, is the production home to Chattanooga Whiskey’s signature expressions, Chattanooga Whiskey 91, Cask 111, and 99 Rye, as well as their Bottled in Bond Vintage Series and Barrel Finishing Series.

Of particular note is the distillery’s focus on a one-of-a-kind Tennessee High Malt style.

What’s in the bottle

The whiskey being reviewed here, Chattanooga Whiskey Bottled in Bond Spring 2020, was barreled from January 2020 through June 2020, produced exclusively at the brand’s Riverfront Distillery. It is part ofd an ongoing process to “create a new, seasonally-inspired blend for each 6-month distilling ‘season’ from the variety of bourbon recipes distilled within the vintage period.”

“Each distilling season,” said Grant McCracken, Founding Distiller at the time this bourbon was released, “our entire grain-to-glass production team comes together to develop our newest Bottled in  Bond vintage. Rather than solely using our signature ‘Barrel 91’ recipe, the team gathers every unique mash bill that was distilled in the 6-month season and develops a blend to reflect the character of that time period.”

The Spring 2020 blend contains three versions of Chattanooga’s wheated recipe (B005, B005v2, B005v3) – which contain multiple varieties of malted wheat and malted barley never before used in this mash bill. These malted grains include Tennessee-grown malted wheat, honey malted barley, and a small amount of cherrywood smoked malted barley.
