Whiskey Review Round Up: Goldspur Corn Whiskey and Reserve

Appearance:
Light gold, topaz, straw. Light gold, topaz, straw. Both expressions look identical, though the Reserve is distilled one more time.
Nose:
Definitely a corn whiskey, slightly bo0zy, a touch of malt. Heavier on the toasted grain notes balanced with corn and malt.
Palate:
Straight shooter. Light bodied, corn, malt, with a hint of candied vanilla. Final Thoughts: It is what it is. An easy sipping corn whiskey, though definitely more on the corn flavor profile. As a cocktail, perhaps a heavier pour over rocks with a splash of soda. Good for a patio on a nice day! The world of craft spirits is always changing, evolving, and innovating. Whiskey is no different. There’s been the emergence of different cask finishes in wine, beer, spirit barrels or even a blend thereof. We have also seen new and more creative ways to attempt to accelerate the maturation process. Put a few barrels on a boat or blast heavy metal music in the room so that the vibrations instigate more contact with the wood. It’s all a process of trial and error, and of course it is the consumer market that decides what truly sticks.

The production of corn whiskey is among these recent trends over the years. The main reason for the development and marketing of these are the fact that more traditional American whiskeys take time to age and time is money. Plus, there’s the fact that when it comes to corn whiskeys, there are buzz words that usually come attached, such as White Dog or even a moonshine-inspired whiskey.

Located near the Wind River Mountain Range in southwestern Wyoming, you’ll find a small distillery by the name of Cowboy Country Distilling. Among their portfolio you’ll find a locally sourced raspberry cordial, gin, vodka, rum, and of course, whiskey.

Tim Trites is the owner and distiller over at Cowboy Country, and he has had a hand in the distilling process since he was eight years old, when he had assisted his Scottish grandfather work his magic. Since then, Trites has done some exploring the process internationally, before finally landing in Wyoming where he would begin the process on his own.

In regards to their working philosophy, the focus is on the utilization of as much locally sourced ingredients as possible, keeping things gluten-free, and of course having fun throughout the process. When it comes to the copper still that they use, it is said to have been brought in from a former brothel in Wallace, Idaho.
