The Isle of Raasay Distillery has unveiled the second edition of Dùn Cana Sherry Quarter Cask Release. The first edition was named ‘The World’s Best Single Malt Scotch Whisky 2024’ by Forbes.

Named after the highest point on the Isle of Raasay, Dùn Cana is an ode to the distillery’s rugged, Hebridean home.

Dùn Cana Sherry Quarter Cask Release: Second Edition

Dùn Cana is a lightly peated single malt, achieved by Isle of Raasay Distillery’s signature distillation regime, which is also used to produce ‘Na Sia’, the brand’s flagship single malt.

Peated and unpeated malt is matured separately in ex-American rye casks before being vatted and finished in Pedro Ximénez and Oloroso sherry quarter casks for six months. Maturing whisky in smaller casks (quarter casks hold around 125 liters of liquid) allows increased interaction between whisky and wood, accelerating the maturation process.

The resulting whisky “exudes peppery spice, dried sultanas and hints of vanilla toffee, with a finish of lingering salty chocolate and a light hint of aromatic wood smoke,” according to a brand press release.

Speaking about the success of the first edition, and the anticipation of the second, Master Distiller, Alasdair Day, commented: “The Dùn Cana Sherry Quarter Cask Release is a great addition to our core product offering at Isle of Raasay Distillery, as it allows further discovery into our style of whisky making whilst presenting the spirit with a distinctively different cask influence than our Signature Single Malt. We were overwhelmed with the positive response last year, selling out in record time to our Slàinte Club and growing global audience. We look forward to bringing future editions of Dùn Cana to our loyal fans.”
