New Hyde Irish Whiskey Influenced By Sherry Cask Maturation

A new 10 year old single malt Irish whiskey has debuted, having spent the final six months before being bottled maturing in ex-Oloroso sherry casks.

A new limited release Irish single malt whiskey that was finished in toasted Oloroso sherry casks from Spain is surfacing into the Irish and international markets, including here in the USA. Plans call for the new 10 year old Hyde Irish Whiskey to be available soon domestically (it is already available overseas).
The new Hyde Irish Whiskey, according to IrishWhiskey.com, was sourced from Cooley distillery, owned by Beam Suntory, by a new whiskey making outfit known as Hibernia Distillers. The whiskey, distilled in a copper pot still from 100% malted Irish barley and cut with fresh Irish spring water, was double cask matured, first in first fill oak bourbon casks for a decade and then a further six months in the previously mentioned sherry ones.

This Irish whiskey, bottled at  46% ABV, is non-chill filtered and limited to 5,000 bottles, all of which are individually numbered and come in special wooden boxes. The name Hyde that’s associated with it, by the way, is not only tied to Ireland’s first president, one Douglas Hyde, but also the last name of several individuals who helped to bring it to market.

Official tasting notes for the Hyde whiskey are below for your consideration.

Nose: Delightful peaches & cream, vanilla, slightly custard, barley malt softness, with citrus, sweet, honey, caramel, vanilla, chocolate, orange, lemon, banana, & infused with spices.

Taste: Wonderfully smooth yet complex, creamy yet fruity with notes of caramel and manuka honey, apricot, plumb, and a silky malt texture.

Finish: Rich, Spicy, & Oaky. It lingers in the mouth with a long rich finish.
