Winemaker David Phinney Debuts Another Wine Cask Finished Whiskey

David Phinney's Slaughter House American WhiskeyNoted California winemaker David Phinney of Orin Swift Cellars, who earlier this debuted an American bourbon finished in the winery’s Cabernet Sauvignon barrels, is back on the minds of whiskey lovers with another recent release from his Splinter Group Spirits label. The new Slaughter House American Whiskey, like the bourbon, rested in former wine casks before being bottled.

Slaughter House American Whiskey was initially aged nine years in American oak before seeing additional maturation time in Papillion barrels. These wine vessels once housed a Bordeaux-styled blended red who’s components were sourced from a range of Napa Valley vineyards. The whiskey was then cut with water from a natural hillside spring found on Phinney’s property some 2,000 feet above California’s Alexander Valley.

This whiskey, bottled at 88 proof, looks to be pricing around $40 average at a range of spirits retailers. Official tasting notes for it are below from Splinter Group.

Intense and inviting with caramelized sugar, baking spices, dark fruits, butterscotch and vanilla notes. The palate is smooth, ultra rich and layered. The finish is impressive with honey, toast and loads of caramel.
