J. Carver Bourbon a New Release from Minnesota

J. Carver Distillery out of Minnesota is just a little over two years old, and is wasting almost no time in getting its whiskies to a thirsty market. It debuted a rye whiskey back in December made from mostly Minnesota rye grains, and now has expanded its footprint into craft bourbon, unveiling J. Carver Bourbon Whiskey.

The new J. Carver Bourbon Whiskey, according to the distillery, has a mash bill that’s 75 percent corn and 25 rye, both of which have been selected “from farms near the distillery.” The resulting distillate, aged in barrels coopered in Minnesota for an undisclosed amount of time, is bottled at 80 proof.

Limited tasting notes for this high-rye bourbon suggest hints of “cinnamon, toffee and oak make it ideal for drinks with bourbon as the central focus.” There was no immediate price given on this whiskey.

The distillery, now that it has a rye and bourbon out, is not resting on its laurels. Rather, it plans to release a straight bourbon and wheat whiskey “in the years to come.”

“This is a truly local Minnesota whiskey,” said founding partner Bill Miller in a statement.
